Lunch, and dinner

The photographer was lazy at lunch...




Roast chick-spice-in-the-skin:
1 chicken breast
2 carrots
2 celery
1cup red wine
1/2c beef stock
1T butter
under-skin:
1T butter
tarragon
turmeric
thyme
s&p

...and dinner





Simple fresh pasta:
1c chiocciole pasta
1 uncooked italian sausage sliced
2 oz each summer squash/zucchini
1 oz skinned/sliced eggplant
3 slices onion/ 1slice minced
1 garlic clove minced
dash:
oregano
s&p
fresh grated aged parmigiana

My take on a Spanish(spain) tortilla
3 eggs
1/8c milk
1/2 potato, thin slices
1/4 onion
1/8c chopped ham
1/8c peas
1t potato starch
dash:
turmeric
sage
s&p

...although it was a nice exercise in nostalgia, and kitchen equipment history I'm going to stick with a food processor...

four->egg wash->crumbs

1c milk (sad. in-lieu of heavy cream)

Happy New year everyone!

First off, here's a little "fireworks"



On to the "meat" of the post...

With my brother and his bird in town for xmas, I thought I would do a French style round roast...



seared roast in a nest of veggies

whiskey and wine deglaze

chicken stock boiling on the back burner

I'm a happy cook with only the bread left on plates :D

Roast for four:
2lbs round roast
4 med. potatos quartered
4 med. carrots, celery stalks chopped
1 leek, green only 1/4" slices
1c. chicken stock
1/4 c. Jameson whiskey
1/2c. Colores del Sol malbec (red wine)
2T olive oil
4T unsalted butter
(2T w/ oil for searing the roast, 2T melted over roast periodically while roasting)
S&P
dash:
thyme
cumin
savory
