Back in Washtenaw County

After a fun and highly educational four years in Ingham Co. I find myself back in the familiar mixed florescent-incandescent glow, wood veneer everything and auto memorabilia of Theo's on Michigan Avenue in Lansing with a mind on fire.  I left Lansing halfway through my birth-month July a number of weekslikedays ago for yet another new restaurant and a quieter existence in Saline.  For those who don't personally know me my name is Brian.  I cook and fix things in an unrelenting journey to do well by all around me and who cross my path on my way... Speaking of ways I seem to have lost mine... Yes!  Now, submerged in the modeled light and frequent outbursts of patrons and staff alike in this 24/7 haven in the otherwise harsh and unwelcoming food desert called mid-michigan, I am filled with ideas and hope for new shit!  It's funny to think how many of the best and most creative moments in life can spring from such a deficit in said things.  Food has been a huge part of my life and most of my time in the past nine years have been spent in on the way to or out of kitchens.  Probably my favorite room in just about any building graced to have one, and now I am sitting alternately sipping on coffee hot cocoa and water imagining ways to give a similar familiar vibe comfort and sustenance to folks wherever hungry mouths and minds maybe found after dark.  Something about the light and veneer take me back to the 70's and 80's diners or breakfast clubs all over our lovely Midwest, and I am rapture'd with the thought "I can do this anywhere!"     Well that's enough for now I suppose... More later thoughts rants and meals to come, thanks for tuning in and have a safe ride!!

April showers and new beginnings

What an anticlimactic winter huh? Though I was a little disappointed not getting the snow to get out and enjoy this year, I was very grateful for the time to get things done inside! Hope everyone is gearing up for a great summer and is ready for all sorts of inspiration and motivation from me and the good folks here at GarageMoreno! More food art and mechanical mischief is on the way!

Let the sun shine!


What a beautiful day!
I spent the first few hours of my day catching up on the sleep I have been depriving my body of, then with the sun calling my name through every window in my house I got to business.




To start the photos off here are a few meals I captured on digital media since my last post:


Breakfast sandwich v6.5

Bacon lardons rendering with spices and minced shallots...

The chef was too hungry to get a photo of the finished product, but here are the bits:

2 oz bacon small chop (2 slices)
1/4 small shallot minced
1/2 small yellow onion
1 celery stock
1/2 small carrot
1 clove garlic minced
dash sage, cumin
1 oz butter
2 oz scotch
3 eggs
2 small croissants

It is finally warm enough outside to get serious about cleaning out he garage and moving some of my stuff on to the next...

New scoot

Seems that I can't keep wheels under me.
My poor s10 blew a head gasket a few weeks ago, jetta is waiting for space in the barn, gsx is waiting for cash and bits to finish...
In the mean time, I was gifted a chinese scoot in need of a lil tlc and beautification. 






And the tear-down 




Needs a wash then on to rebirth!

This must be the fourth time I have ever had a friday/saterday off consecutively.
Tax time. It's time to get some food, drink and good times.
